2019 has been a good year for Hiperbaric in economic, technical and, of course, in corporate terms.
Hiperbaric has continued growing and keeping its worldwide leadership as a supplier of high hydrostatic pressures processing machines. The important investment in R&D, the portfolio of new projects with important companies around the world and the personal and technical quality of our team, are the keys.
Hiperbaric technology set HPP trends
We started with an important Project pipeline, and the effort, commitment and expertise of all our staff, have not only help to finish them but to generate and make new deals. These have helped to keep our turnover and our World leadership as High-Pressure Processing machine manufacturer for food and beverages.
The most outstanding Project, notable due to its novelty, impact and HPP trend, is the french Company Ateliers Hermes Boissons (AHB) purchasing of the first Hiperbaric 525 Bulk. A milestone that has received international press coverage.
EAs Mr Cyril Ledran, President of AHB, has said: “Premium juices are the main trend in the European market. Our objective is to offer superb quality, something possible thanks to the Hiperbaric 525 Bulk unit. This machine allows us to give the numerous HPP advantages to our customers, with cold pressurized juices with an extended shelf-life, using no chemicals. Even more, it allows us to use any package (carton, bag-in-box or PET)”.
Of the roughly 40 units marketed worldwide in 2019, Hiperbaric has installed the 63%. And being all them interesting and exhilarating, we have to highlight the followings:
- The expansion of Greenhead Lobster will help to revitalize the región, historically dedicated to lobster fishing;
- The new toll processing facility in the west USA, Intermountain HPP, that will bring HPP technology and its advantages to the restaurant chain Pulp Lifestyle Kitchen;
- The commitment of RV Fresh Foods for the technology that allows them to, as Mr Ramón Valencia, General Manager of RV says: “supply correctly and on time, products of the best quality to our customers”;
- Accua HPP Solutions opening in November, the HPP tolling centre in Elgoibar (Guipúzcoa, Spain), which in such a short time has gotten hold of important customers in Navarra, Aquitania, Cantabria, La Rioja or Castilla y León;
- The completely automated facility of HPP Services Belgium that enables to get a 100% transparent traceability and to optimize the productive output of the biggest HPP machine in the market.

Expertise and entrepreneurship together
During the last term of the year, we had celebrated our 20th Anniversary, reviewing our successful history and hazarding a bright future thanks to the constant presence of R&D in the whole company. To our event assisted more than 500 people including coworkers, suppliers, customers and authorities.
During the event, honouring our mission of “being the world reference supplier in high-pressure” and the transparency that characterizes us, in addition to inaugurating the expansion of our facilities in Burgos (Spain), we presented a new line of business for post-processing of additive manufacturing metal parts (3D), HIP (Hot Isostatic Pressing) technology machines. Andrés Hernando, CEO of Hiperbaric emphasizes the above-mentioned R&D work: “This new technology has meant an investment of 4 million euros but above all more than 3 years of effort by highly specialized engineers”.
What food trends will HPP follow in 2020?
As we did in the entry Global Trends in High-Pressure processing for 2019, we gather below the 5 main trends that we believe will be followed by HPP food and beverage producers.
Ready-to-eat meals (RTE) y ready-to-drinks beverages (RTD)
Convenience remains as one of the main trends, both in RTE and regular HPP products. The 2020 consumer wants meals that provide comfort but with extras of flavour, quality and variety, because more and more families are looking to make their busy schedule compatible with a healthy and varied diet, with high added value and relegating fast food to an exception. Companies producing food and beverages HPP, such as The Soup Spoon, Tappers, Sandrige Foods or Villa Food have managed to guide their product portfolio to respond to this trend.
Single bite snacks
As a prominent trend within the RTE, we find a growing demand for healthy snacks to “kill a craving” between meals, an HPP trend that has reached both the protein and vegetable sectors and is aimed at an adult audience, but also children, as part of a much more responsible and healthy food education. Fresh Bellies or Bright Foods are some examples of these snacks for children.
Sustainability in all areas
Concern about the use we make of raw materials and how we manage waste is a growing trend that is reflected in food and beverage purchase decisions. Consumers demand a greater commitment to the food industries, not only in the management of packaging but also in the origin of raw materials, transportation of goods and food waste. Industries that produce HPP products have taken the lead in this trend. Here are some examples:
Plant-based products
Not only is it an exclusive trend of HPP, but it is “THE” trend with capital letters. All sectors join it, including meat that has seen in the growing demand for plant-based foods, a very lucrative line of business in which to diversify. The R&D developments aimed at providing these foods of vegetable origin with organoleptic characteristics, mainly taste and texture, similar to meat products are numerous and the achievements really exciting.
Companies like Good Foods, L’Atelier V and Applegate have joined this HPP trend.
Food for more than just a pet
The concern for the health and well-being of our pets is an upward trend that has climbed in high hydrostatic pressures (HPP), not only for food safety of raw materials processed by this technology but also for the numerous advantages that entails at a nutritional level and useful life. Some industries, such as Petkis and Kiwi Kitchens, already know this technology and have seen what it can bring them.
