An estimated 1/3 of food produced globally is lost or wasted, amounting to over 1.3 billion tons per year according to the Food & Agriculture Organization of the United Nations.

According to research by Dr. Mary-Grace Danao at the University of Nebraska-Lincoln, dark-cutting beef that is often wasted can be valorized by subjecting it to HPP. Her findings demonstrate how technological innovations can transform food systems to reduce waste.
