However, like any advanced technology, it still requires ongoing research to optimize process conditions and understand how factors such as the food matrix or microorganisms influence specific products. Mastering these nuances is key for product developers to translate theory into safe, high-quality, and commercially viable solutions.<\/strong><!--more--><\/p>\n<p>Research projects involving multidisciplinary teams from large and small international companies and diverse universities provide a framework for addressing questions that are difficult for one organization to solve alone. Funding agencies such as the USDA National Institute of Food and Agriculture (NIFA) or the European Commission evaluate proposals from technical consortia each year to allocate funding that supports the generation of new knowledge.<\/p>\n<p>As the world\u2019s leading manufacturer of HPP equipment, <a href=\"https:\/\/www.hiperbaric.com\/en\/\">Hiperbaric<\/a> is committed to addressing key questions about <strong>how to improve microbial inactivation<\/strong> in challenging matrices, <strong>how to combine HPP with clean-label hurdles<\/strong>, <strong>how to assess consumer acceptance<\/strong>, <strong>how to support scale-up<\/strong>, and <strong>how to make sustainable technologies more accessible<\/strong> to the food industry.<\/p>\n<p>The EU-funded <a href=\"https:\/\/transit-itn.com\/\">TRANSIT<\/a> project, in which Hiperbaric took part as partner organization, was designed precisely around this kind of challenge: <strong>optimizing sustainable technologies <\/strong>such as pulsed electric fields, ultrasound, cold plasma, and high-pressure processing to improve food safety and accelerate industrial application.<\/p>\n<p>&nbsp;<\/p>\n<h2>From Research Questions to Industry-Relevant Answers<\/h2>\n<p>For an equipment manufacturer like Hiperbaric, this type of collaboration is highly valuable. In R&amp;D initiatives, this contribution takes the form of:<\/p>\n<ul>\n<li>Technical consulting<\/li>\n<li>Advisory support<\/li>\n<li>Access to <a href=\"https:\/\/www.hiperbaric.com\/en\/hpp-technology\/services\/hpp-incubator-pilot-plants\/\">HPP Incubators<\/a><\/li>\n<li>Guidance on how research questions can be framed so that the results are meaningful for food processors<\/li>\n<\/ul>\n<p>This role helps bridge the gap between laboratory research and real industrial needs. In the case of TRANSIT, the project brought together academic and non-academic partners across Europe to train early-stage researchers and generate knowledge at the interface of microbiology, food technology, risk assessment, consumer science, and industrial implementation. He evaluated HPP at 600 MPa (87,000 psi) for 3 min, alone and in combination with nisin or blueberry extract, in both beef and plant-based patties. The study assessed food safety through a <strong><em>Listeria monocytogenes<\/em> challenge test<\/strong> and <strong>shelf-life performance<\/strong> during storage under slight temperature abuse conditions. Results showed that combining HPP with nisin or blueberry extract improved pathogen control, with particularly strong effects in plant-based patties, where <em>L. monocytogenes<\/em> remained at low levels during extended storage. The study also highlighted important matrix-dependent differences: HPP was more effective against spoilage microorganisms in plant-based patties, while in beef patties, the combinations helped delay specific spoilage groups but also revealed quality considerations such as color changes after pressure treatment. The work examined selected <em>Escherichia coli<\/em> K12 <strong>single-deletion mutants<\/strong> and <em>L. monocytogenes<\/em> strains associated with <strong>stress-response pathways<\/strong>, with the objective of identifying genes potentially involved in microbial resistance to HPP. The methodology combined screening of mutant libraries, selection of candidate strains, HPP treatments in broth and real food matrices such as plant-based patties and beef, microbiological enumeration after processing, and statistical comparison of strain responses.<\/p>\n<p>Together, these case studies illustrate how collaborative R&amp;D can translate complex scientific questions into practical knowledge, helping food processors understand not only whether HPP works, but how microbial genetics, product composition, real formulations, ingredients, and shelf-life conditions can influence its performance in industrially relevant scenarios.<\/p>\n<p>&nbsp;<\/p>\n<h2>Why Collaborative R&amp;D Matters for Research Adoption<\/h2>\n<p>Collaborative projects help convert scientific uncertainty into applied knowledge, creating benefits across the food value chain:<\/p>\n<ul>\n<li><strong>For food processors<\/strong>, this means better data to support formulation decisions, processing conditions, shelf-life studies, and quality expectations.<\/li>\n<li><strong>For technology providers<\/strong>, it means deeper understanding of how equipment is used across applications, which helps improve technical guidance and support customers more effectively.<\/li>\n<li><strong>For consumers<\/strong>, it can ultimately mean access to foods that are safer, fresher, more convenient, and aligned with expectations for minimally processed and clean-label products.<\/li>\n<\/ul>\n<p>At Hiperbaric, participation in R&amp;D initiatives reflects a long-term commitment to advancing HPP.
