Its unique sensory profile and high nutritional value make it highly prized. However, its high water activity and pH, intrinsic to its nature, make it particularly susceptible to spoilage and microbial growth, presenting significant preservation challenges. In this context, High Pressure Processing (HPP) emerges as a non-thermal, transformative solution<\/strong><strong>.<\/strong><\/p>\n<h2>Scientific Validation: Preserving Quality, Safety and Essential Propertie<\/h2>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignright wp-image-63073\" src=\"https:\/\/www.hiperbaric.com\/wp-content\/uploads\/2025\/05\/Imagen2.png\" alt=\"\" width=\"262\" height=\"175\" \/><\/p>\n<p>Recent studies conducted by Southeast Asian universities such as <a href=\"https:\/\/www.upm.edu.my\/\">Universiti Putra Malaysia (UPM)<\/a> have validated the effectiveness of HPP processing applied at pressures of 400-600 MPa. The results show that this technology achieves:<\/p>\n<ul>\n<li><strong>Effective pathogen inactivation<\/strong>: significant reduction of microbial load, between 4 and 5 log CFU\/g.<\/li>\n<li><strong>Elimination of molds and yeasts: <\/strong>even with mild treatments of 300 MPa for 10 minutes.<\/li>\n<li><strong>Preservation of nutritional properties: <\/strong>no alterations in proteins, fats or sugars.<\/li>\n<li><strong>Preservation of sensory attributes:<\/strong> retention of color and texture, crucial for shelf appeal.<\/li>\n<li><strong>Significant reduction in enzyme activity: <\/strong>decrease in polygalacturonase, the enzyme responsible for undesired softening.<\/li>\n<\/ul>\n<p>These findings confirm that HPP not only <strong>guarantees durian food safety<\/strong>, but also <strong>maintains the organoleptic and nutritional qualities<\/strong> that make durian such a valued product. Asian consumers, increasingly interested in \u201cfresh but safe\u201d foods, have driven demand for<strong> minimally processed<\/strong> products that can be exported without loss of quality.<\/p>\n<h2>Innovation supported by HPP Academy<\/h2>\n<p>The Hiperbaric <strong>HPP Academia network<\/strong>, <strong>which brings together<\/strong> Universities and R&amp;D Centers in Asia, Europe and the Americas, has played a key role in generating technical data and validation protocols. In this way they process durian in different formats, mainly pulp and paste, ensuring quality and safety.
