Unlike traditional heat pasteurization, HPP effectively inactivates pathogens and spoilage microorganisms without compromising product quality. This technology is gaining traction for its ability create added-value products, and meet consumer demands for clean-label foods. In this post, we explore the various applications of HPP in dairy, including milk preservation, cheese production, and other potential uses.<\/em><\/strong><\/p>\n<p><!--more--><\/p>\n<p>Dairy products are an excellent source of proteins, minerals, and vitamins. Heat pasteurization has traditionally ensured food safety and extended the shelf life of milk and derived products such as cheese and yogurt. However, post-pasteurization environmental contamination by pathogens such as <em>Listeria monocytogenes<\/em> has led to an increasing number of <a href=\"https:\/\/www.nytimes.com\/2024\/02\/07\/business\/cheese-listeria-outbreak-recall.html\">recalls and foodborne outbreaks<\/a>. However, some companies are already taking advantage of the process to ensure safety and preserve the quality of <strong>raw milk<\/strong>, extend the shelf life of <strong>fresh cheese<\/strong>, and delay spoilage and eliminate pathogens in <strong>hard<\/strong> and <strong>semi-hard cheeses<\/strong>.<\/p>\n<p>The availability of <a href=\"https:\/\/www.hiperbaric.com\/en\/hpp-technology\/equipment\/hpp-in-bulk\/\">more productive equipment<\/a> that allows bulk processing of liquids before packaging, along with recent scientific advances, supports the potential of HPP technology to deliver added-value dairy products and even create new product categories. Keep reading to learn how the dairy industry can leverage the use of HPP.<\/p>\n<h2>HPP Applications in the Dairy Industry<\/h2>\n<h3>Milk<\/h3>\n<p>Since scientists at the West Virginia Agricultural Experiment Station used milk as the first food matrix to explore the effect of HPP in 1898, numerous investigations and assessments by food safety authorities have confirmed that the process is suitable for preserving milk. <strong>Figure 1A<\/strong> shows that processing raw milk at 6000 bar (87,000 psi) for 3 min extended the shelf-life of raw milk <strong>up to 30 days<\/strong> at 4 \u00b0C (39 \u00b0F) and kept <em>Enterobacteriaceae<\/em> counts below the detection limit (&lt;1 CFU\/ml). The same processing conditions yielded a <strong>5-log<sub>10<\/sub> reduction<\/strong> of <em>Escherichia coli<\/em>, <em>L. monocytogenes<\/em>, and <em>Salmonella <\/em>spp. (<strong>Figure 1B<\/strong>).<\/p>\n<div class=\"mceTemp\"><\/div>\n<figure id=\"attachment_62200\" aria-describedby=\"caption-attachment-62200\" style=\"width: 600px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" loading=\"lazy\" class=\"wp-image-62200\" title=\"Figure 1. Total viable (\u2022) and Enterobacteriaceae (\u25b2) counts in unprocessed (solid line) and high-pressure processed (6000 bar \/ 87k psi for 3 min) (dashed line) raw milk (A); and pathogen inactivation on raw milk (B) (Stratakos et al. 2019).<\/figcaption><\/figure>\n<p>Other reports show that processing raw milk at 6000 bar (87,000 psi) for 10 min yielded a 4-log<sub>10<\/sub> reduction of total plate counts, and counts remained steady below 10<sup>2<\/sup> CFU\/ml through 60 days of storage at 6 \u00b0C (43 \u00b0F) <a href=\"https:\/\/www.mdpi.com\/2304-8158\/12\/3\/592\">(Lim et al. 2023)<\/a>. According to <a href=\"https:\/\/www.sciencedirect.com\/science\/article\/pii\/S0740002006001341\">Chen et al. (2007)<\/a>, processing artificially inoculated UHT milk at 6000 bar (87,000 psi) for 6 min achieved a &gt;3-log<sub>10<\/sub> reduction for <em>Staphylococcus aureus<\/em> and <em>E. coli<\/em> O157:H7 and a &gt;6-log<sub>10<\/sub> reduction for <em>S. Enteritidis<\/em> and <em>L. monocytogenes<\/em>.<\/p>\n<p>Although there is limited scientific research on whether pathogen inactivation is maintained throughout storage, agencies like New South Wales government in Australia <a href=\"https:\/\/www.foodauthority.nsw.gov.au\/sites\/default\/files\/_Documents\/corporate\/annual_report_2015-2016.pdf\">(Szabo et al. 2016)<\/a> and EFSA in Europe have evaluated and confirmed that HPP can produce safe milk. In this regard, EFSA concluded that processing raw milk at <strong>6000 bar (87,000 psi)<\/strong> for <strong>8 min<\/strong> is required to achieve the performance criteria for pertinent pathogens such as <em>Mycobacterium bovis<\/em>, <em>L. monocytogenes<\/em>, STEC, <em>Salmonella<\/em> spp., <em>Campylobacter<\/em> spp. and <em>S. aureus<\/em> <a href=\"https:\/\/efsa.onlinelibrary.wiley.com\/doi\/epdf\/10.2903\/j.efsa.2022.7128\">(Koutsoumanis et al. 2022)<\/a>.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter wp-image-62176\" src=\"https:\/\/www.hiperbaric.com\/wp-content\/uploads\/2025\/02\/leche-HPP-300x173.jpg\" alt=\"Leche HPP\" width=\"600\" height=\"345\" srcset=\"https:\/\/www.hiperbaric.com\/wp-content\/uploads\/2025\/02\/leche-HPP-300x173.jpg 300w, https:\/\/www.hiperbaric.com\/wp-content\/uploads\/2025\/02\/leche-HPP-1024x590.jpg 1024w, https:\/\/www.hiperbaric.com\/wp-content\/uploads\/2025\/02\/leche-HPP-768x442.jpg 768w, https:\/\/www.hiperbaric.com\/wp-content\/uploads\/2025\/02\/leche-HPP-1536x884.jpg 1536w, https:\/\/www.hiperbaric.com\/wp-content\/uploads\/2025\/02\/leche-HPP-1260x725.jpg 1260w, https:\/\/www.hiperbaric.com\/wp-content\/uploads\/2025\/02\/leche-HPP-630x363.jpg 630w, https:\/\/www.hiperbaric.com\/wp-content\/uploads\/2025\/02\/leche-HPP-420x242.jpg 420w, https:\/\/www.hiperbaric.com\/wp-content\/uploads\/2025\/02\/leche-HPP-840x484.jpg 840w, https:\/\/www.hiperbaric.com\/wp-content\/uploads\/2025\/02\/leche-HPP-315x181.jpg 315w, https:\/\/www.hiperbaric.com\/wp-content\/uploads\/2025\/02\/leche-HPP.jpg 1643w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/p>\n<p>Moreover, the process respects the quality attributes of fresh milk. The concentrations of <strong>vitamins A, C, D, E, K<\/strong>, and all <strong>B-group vitamins<\/strong> were not significantly affected after processing fresh milk at 6000 bar (87,000 psi) for 10 min <a href=\"https:\/\/www.mdpi.com\/2304-8158\/12\/3\/592\">(Lim et al. 2023)<\/a>. The same processing conditions did not affect the <strong>viscosity<\/strong> of raw goat milk, whereas heat pasteurization at 70 \u00b0C (158 \u00b0F) for 5 min to 15 min decreased viscosity by 7% to 17% <a href=\"https:\/\/onlinelibrary.wiley.com\/doi\/abs\/10.1111\/jfpp.15590\">(Razali et al. 2021)<\/a>. <strong>Color<\/strong> is affected by processing conditions: HPP destabilizes casein micelles, causing them to lose their colloidal stability. This changes light scattering properties, resulting in a yellowish coloration depending on the level of casein dissociation. In this regard, <a href=\"https:\/\/www.sciencedirect.com\/science\/article\/pii\/S1466856418310555\">Stratakos et al. (2019)<\/a> reported that HPP at 6000 bar (87,000 psi) for 3 min had a lower impact on color attributes (DE = 2.3) compared to thermal pasteurization at 72 \u00b0C (161.6 \u00b0F) for 5 min (DE = 3.3), which resulted in a significant decrease in <em>L<\/em>* and <em>b<\/em>* color components.<\/p>\n<p>Companies such as <a href=\"https:\/\/villadepatos.com\/\">Villa de Patos<\/a> in Mexico or <a href=\"https:\/\/www.madebycow.com.au\/\">Made by Cow<\/a> in Australia have adopted HPP to ensure food safety and preserve quality attributes of <strong>non-homogenized raw milk<\/strong>.<\/p>\n<h3>Fresh Cheese<\/h3>\n<p>Heat pasteurization of milk is required for the manufacture of derived products such as fresh cheese. However, <strong>environmental contamination<\/strong> can be introduced during curdling, curd cutting, molding, brining, or packaging. This significantly reduces commercial shelf-life and potentially introduces hazards such as <em>L. monocytogenes<\/em>. This highlights the importance of adequate Cleaning and Sanitation programs that ensure the absence of the pathogen at high concentrations in food contact surfaces. The presence of a governing liquid in the package is usually required to ensure the absence of residual air and to uniformly transmit pressure.<\/p>\n<h2>Ripened Cheese<\/h2>\n<p>Similar to the manufacture of fresh cheese, ripened cheeses that require aging to develop their characteristic texture and flavor can introduce hazards that may persist until the end of the ripening process. Additionally, some jurisdictions allow the manufacture of cheese from raw milk, which is a well-known source of pathogens. High Pressure Processing emerges as a valuable tool to process <strong>whole cheeses<\/strong> or <strong>cheese portions<\/strong>, ensuring the absence of pathogens of concern in the final product.<\/p>\n<p>A study in which raw milk was purposely inoculated with <em>L. monocytogenes<\/em> for cheese production revealed that the pathogen persisted throughout 60 days of ripening at 12 \u00b0C (53.6 \u00b0F) <strong>(Figure 3)<\/strong>. However, processing the cheeses at 5000 bar (72,500 psi) for 5 min after 50 days of ripening reduced the counts to undetectable levels (&lt;1 CFU\/g).
