We hope you find it as interesting as we do.<\/p>\n<h2><strong>Innovative Approaches in Food Safety: Leveraging Protective Cultures and High-Pressure Processing<\/strong><\/h2>\n<p>The research centers <a href=\"https:\/\/www.hiperbaric.com\/en\/hpp-technology\/what-is-hpp\/\">HPP technology<\/a> within three major trends shaping the future of our food system:<\/p>\n<ol>\n<li>increased recognition of food\u2019s role in health<\/li>\n<li>demand for clean-label preservation methods<\/li>\n<li>holistic understanding of microbes&#8217; roles in human health and food safety.<\/li>\n<\/ol>\n<p>Specifically, the research presents a proof-of-concept encapsulation system for <strong>HPP-products containing freeze-dried cultures<\/strong>.<\/p>\n<p>&nbsp;<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter wp-image-57772\" src=\"https:\/\/www.hiperbaric.com\/wp-content\/uploads\/2024\/07\/1-proof-of-concept-300x147.jpg\" alt=\"\" width=\"800\" height=\"393\" srcset=\"https:\/\/www.hiperbaric.com\/wp-content\/uploads\/2024\/07\/1-proof-of-concept-300x147.jpg 300w, https:\/\/www.hiperbaric.com\/wp-content\/uploads\/2024\/07\/1-proof-of-concept-420x206.jpg 420w, https:\/\/www.hiperbaric.com\/wp-content\/uploads\/2024\/07\/1-proof-of-concept-315x155.jpg 315w, https:\/\/www.hiperbaric.com\/wp-content\/uploads\/2024\/07\/1-proof-of-concept.jpg 596w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/p>\n<h2><span lang=\"EN-US\">Protective Cultures<\/span><\/h2>\n<p>Although this proof-of-concept system is applicable to all freeze-dried bacterial cultures, our use of commercially available protective cultures <strong>enhances the food safety<\/strong> of HPP-treated products while maintaining the clean-label and minimally processed appeal of HPP.<\/p>\n<p>Protective cultures is a <strong>bio-preservation technique based on the use of live microbes<\/strong> to combat foodborne pathogens and spoilage agents.<\/p>\n<blockquote><p>It is a microbial partnership with the \u201cgood\u201d bacteria to target undesirable microbes by either by displacing them, outcompeting with them for nutrients, or eliminating through the production of antimicrobial metabolites.<\/p><\/blockquote>\n<p>The protective strains used in this study inhibit mold and yeast in dairy products through the production of acid.<\/p>\n<p>This kind of approach to food safety represents a significant paradigm shift in modern food microbiology.<\/p>\n<p>Protective cultures <strong>challenge the traditional view<\/strong> that microbes are merely sources of spoilage or disease.<\/p>\n<p>As such, protective cultures align with two key trends in the food industry:<\/p>\n<ol>\n<li>Growing public acceptance of beneficial microorganisms.<\/li>\n<li>Demand for minimally processed and clean-labeled foods.<\/li>\n<\/ol>\n<h2><\/h2>\n<h2><span lang=\"EN-US\">High-Pressure Processing (HPP)<\/span><\/h2>\n<p>Similar to protective cultures, HPP is another clean-label alternative preservation technique.<\/p>\n<p><strong>HPP inactivates microbes by subjecting them to high-pressure levels (100-600 MPa)<\/strong>, extending the shelf life of food products without impacting their &#8220;fresh&#8221; We used a response surface model to optimize the encapsulation process, ensuring it did not significantly affect the viability of our cells.<\/p>\n<p>&nbsp;<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter wp-image-57790\" src=\"https:\/\/www.hiperbaric.com\/wp-content\/uploads\/2024\/07\/7-Cocoa-Butter-Encapsulation-via-Homogenization--300x169.jpg\" alt=\"\" lang=\"EN-US\">Viability and Activity<\/span><\/h2>\n<p>The next question was, does the cocoa butter successfully prevent the migration of moisture from re-hydrating our cells?<\/p>\n<p>To answer this, we stored our encapsulated cultures in a liquid prior to HPP and measured it\u2019s post-HPP counts (viability) and acidification activity.<\/p>\n<p>&nbsp;<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter wp-image-57793\" src=\"https:\/\/www.hiperbaric.com\/wp-content\/uploads\/2024\/07\/8-Post-activity-design-300x169.jpg\" alt=\"\" width=\"800\" height=\"450\" before treatment, <strong>we found that the encapsulated cultures maintained high viability and activity<\/strong> after HPP treatment.<\/p>\n<p>&nbsp;<\/p>\n<p><img decoding=\"async\" Future Directions<\/span><\/h2>\n<p>Circling back the main question of this work: <strong>How do we overcome microbial challenges in HPP?<\/strong><\/p>\n<p>This work shows that, <strong>by leveraging freeze-dried protective cultures and cocoa butter<\/strong>, we could add the second hurdle needed to target spore forming pathogens, thus enhancing the food safety of HPP while maintaining it\u2019s clean-label appeal and expanding its application to low-acid foods.<\/p>\n<p>More broadly, we developed a system that integrates functional cultures in HPP-treated foods without compromising viability or activity, expanding HPP application for probiotic and fermented foods, which play a significant role in the health food space.<\/p>\n<p>&nbsp;<\/p>\n<p><img decoding=\"async\" loading=\"lazy\"
